卡拉膠(Carrageen,CAS 9000-07-1),又稱鹿角菜膠、角叉菜膠、愛爾蘭苔菜膠,是一種從海洋紅藻(包括角叉菜屬、麒麟菜屬、杉藻屬及沙菜屬等)中提取的多糖的統(tǒng)稱,是多種物質(zhì)的混合物,有ι(Iota),κ(Kappa),λ(Lamda),μ(mu)四種??ɡz的名字來源于愛爾蘭苔菜(Chondrus crispus, 也被稱為角叉菜),角叉菜在愛爾蘭語被稱為carraigín。1844年,卡拉膠首次從海藻中分離出來。當(dāng)被用于食品時,在食品的包裝上,卡拉膠以歐洲聯(lián)盟的E編碼E407(藻酸鹽)表示。
